Pork Filet, Smoked Sausage and Mushroom Casserole

This is a high protein double meat dish, ideal for family and friends gatherings!


  • 1 small pork filet (tenderloin) - about 500g cut into cutlets
  • 2 kielbasa ( smoked Polish sausages) cut in four
  • About 150g of fresh mushrooms, sliced
  • 1 medium onion and one stick of celery, chopped
  • 4 garlic cloves, chopped
  • 2 bay leaves and few pepper corns
  • 2 tbsp of olive oil and 50 g of butter
  • 1 tbsp of English or Dijon mustard
  • Half cup of cider
  • Salt & pepper, to taste


Step 1

Place a large skillet on medium high heat then add the oil and butter and fry the pork cutlets until nicely browned. Put aside when done. In the same skillet, stir fry the mushrooms followed by the onions and celery then, when cooked enough, add the rest of the ingredients including the sausages. Cover with a lid and simmer on a lower heat until the meat is cooked and a nice sauce has been formed. Taste and adjust the seasonings if needed.

Step 2

Mashed potatoes and braised cabbage would be perfect as accompaniments.
