Swiss Chard, Chickpeas and Yogurt Trio

This recipe is inspired by the Lebanese way of using yogurt in some dishes. It’s quite an appealing dish, easy and nutritious. If the chard is not available you can replace it by collard / spring greens or spinach.
Ingredients
- 200g Swiss chard leaves, washed and chopped
- 100g of cooked chickpeas
- 1 cup of Greek style yogurt seasoned with 2 cloves of garlic mashed with some salt
- 1 onion, chopped
- 3 tbsp of olive oil to cook the chard
- Homemade chili oil (olive oil) for drizzling
- Salt and pepper, to taste
Method
Step 1
Add the 3 tbsp of olive oil into a skillet to sauté the onions, on medium high heat. When the onions are lightly coloured, add the chopped chard, salt and pepper and stir fry until the chard is cooked. Remove the chard from the skillet and spread it on a serving dish. Keep in a warm place. In the same skillet, heat the chickpeas slightly then season them with salt and pepper.
Step 2
In a bowl, mix the yogurt with the mashed garlic then spread it evenly over the chard. When done, top with the chickpeas then drizzle with the chili oil and serve with flat bread. If you don’t like chili, use sweet paprika and olive oil instead.
