Pinto Beans Salad

Beans are important for our diet. It is rich in plant protein, fibre, vitamins and minerals. Regular consumption of beans has been linked to a reduced risk of obesity, cardiovascular diseases and cancer. It also controls blood sugar level because of the fibre! Beans can be used as a meat substitute for vegetarians.

NB: you can use any other bean if you like but pinto bean, also known in UK as speckled or strawberry bean, is really good for this salad.

Ingredients

  • 300g of home cooked or canned pinto beans
  • Green and red peppers (half of each), finely diced
  • 3 spring onions, finely chopped
  • A big handful of parsley, finely chopped
  • 1 large tomato, finely diced
  • 1 tsp of lime or lemon zest + lime or lemon juice (to taste)
  • 2 garlic cloves, finely mashed with red chili and salt ( to taste)
  • 1 tsp of dry oregano
  • 2 or 3 tbsp of olive oil

Method

Step 1

Put the beans in a salad dish then add to it all the other ingredients. Mix to combine then taste. Adjust the seasonings if needed then place the salad in the refrigerator at least half an hour before serving it!
