Walnut Salad My Way

We surely all know by now that walnuts are a good source of healthy fats. They are packed with omega-3 fatty acids which help reduce the bad cholesterol. They are also good for our brain, heart and gut health.
Their history can be traced to ancient Persia where they were once meant for royalty. In France, mainly in the Périgord area (Dordogne valley), walnut oil is crafted and used for cooking (and also wood finishing)! In the kitchen, it’s a flavourful addition to salads, dressings and baked goods.
Ingredients
- 200g of Walnuts soaked in cold water for few hours then drained
- A handful of finely chopped parsley
- 2 or 3 spring onions, finely chopped
- Few sprigs of mint, finely chopped
- Small handful of green olives, pitted and sliced
- Small handful of pitted and sliced black olives + extra for decoration
- 2 gherkins and 2 baby cucumbers, finely chopped
- 2 tbsp of pickled capers, chopped
- A trickle of pomegranate molasses or to taste
- A trickle of honey
- 1 tbsp of sweet red pepper paste
- Chili powder or chili paste to taste (optional)
- Salt and black pepper, to taste
- 2 or more tbsp of walnut oil or olive oil!
Method
Step 1
Mix all the ingredients to combine. Taste and adjust seasonings if needed. Chill the salad then top with the extra sliced black olives before serving.
