Smashed Potatoes, My Way2021-08-28

You will love these potatoes. They are crispy, garlicky, buttery, peppery and damn delicious!
And they are perfect to accompany any main dish.
The addition of shredded mushrooms will add more umami and crisp to this dish.
- 8 medium-size unpeeled potatoes, washed and boiled in salty water
- 150g of cleaned brown or white mushrooms
- 4 cloves of garlic
- A handful of fresh oregano + few leaves of fresh thyme
- 100g of butter
- A drizzle of olive oil
- Black pepper, sweet paprika and salt to taste
Preheat the oven to 200 C. After cooking the unpeeled potatoes until tender, drain the water and place the potatoes into an oiled oven safe dish. Then take a potato masher and smash each potato until flattened but still in one piece. Drizzle with olive oil then bake them until golden.
While they are baking, shred finely the mushrooms, the garlic and the herbs in a food processor - or by hand - then mix with all the seasonings.
Remove the dish from the oven. Top the obtained mixture all over the potatoes. Also scatter pieces of butter then put the potatoes back in the oven and continue to bake them until they are golden brown and crispy. Serve hot!
