Baked Aubergine (Eggplant), My Way

This a delicious and easy dish to prepare! All you need are 3 main
Ingredients. Done in more or less 30 minutes in the oven, at 200 degrees Celsius.

If you like it spicy hot, smear the aubergine with some Harissa paste before baking.

Let’s cook!


  • 1 large aubergine, washed, head removed and cut lengthwise into 2 pieces
  • 1 tomato, washed and kept whole
  • About 75g of Mozzarella cheese, cut into sticks and some into small cubes
  • Drizzle of olive oil
  • Garlic powder, salt & black pepper to taste
  • Optional: add a smear of Harissa paste


Step 1

Cut the aubergine (eggplant) lengthwise into 2 pieces. Place them in an oiled and ovenproof dish with one whole tomato. With a sharp knife, slash the surface of each aubergine piece (regular slashes, not too deep) then drizzle with enough oil and sprinkle with salt and garlic powder, coating properly the pieces. If using harissa, then smear it also on top of each piece.

Step 2

Bake in preheated oven (200 Celsius) for about 20 minutes or until cooked. While the aubergines are in the oven, cut the Mozzarella cheese into small sticks (as many as the slashes) and enough small cubes for topping.

Step 3

When ready, take the dish out of the oven. Remove the grilled tomato, peel it, salt it then chop it. Take the Mozzarella sticks and insert them into the slashes of the aubergines then cover both pieces with the cooked tomato and top with the Mozzarella cubes. Put the dish back into the oven for about 10 minutes or until the cheese has melted. Sprinkle fresh milled black pepper and serve warm!
