Potato and Egg Medley

This is quite a simple meal usually made by the Lebanese housewife when she doesn’t have the time to cook a normal meal but still needs to have something healthy enough to feed her family.
It has only few ingredients: potatoes, eggs, olive oil and seasonings.
It is eaten with some herbs (fresh mint, fresh basil, green za’atar…), greens (rocket, watercress, spring onions, mustard leaves…), tomatoes, olives, cucumbers…) served on the side; and Lebanese flat bread.
Ingredients
- 4 medium sized potatoes, boiled with their skin
- 3 eggs, hard boiled
- 1/2 tsp of allspice
- Black pepper and salt, to taste
- 4 tbsp or more of olive oil
Method
Step 1
Peel the potatoes and the eggs and mash them with a fork while they are still warm. Add the allspice, black pepper, salt and combine all with 3 tbsp of olive oil (or more if needed).
Step 2
Spread the mixture on a platter and drizzle the top with some more olive oil. Serve at room temperature with raw greens, herbs and flat bread on the side.
