Prawns – Grilled or Sautéed

I love prawns and I think many of us do too! In U.K., these crustaceans are called prawns whereas elsewhere they are also known as shrimps.

In my recipe, I use the large king prawns (a.k.a. jumbo shrimps) but you can also use any medium size prawns.

PS: for this recipe, you need to buy fresh or frozen raw prawns.

Most prawns are farmed, mainly in the Far Eastern countries, sometimes in polluted conditions. To avoid contamination by some dangerous bacterias, make sure, as much as possible, to buy the prawns from a safe and sustainable source.

Like any raw meat, bacterias have a good chance of being cooked off so do cook your prawns thoroughly!

Ingredients

  • 1 dozen of whole frozen black tiger prawns, defrosted. and washed thoroughly
  • 1 chopped fresh red hot chili + 1 tsp of paprika (optional)
  • 4 or 5 garlic cloves, finely grated or mashed
  • Juice of 2 limes or 1 large lemon + grated peel
  • 1 big handful of fresh parsley, chopped
  • 1 tsp of white pepper
  • Enough olive oil to coat the prawns
  • 1 tbsp of garlic powder
  • Salt

Method

Step 1

Prepare the marinade by mixing together all the seasoning ingredients. With the sharp end of a knife, prick and make small incisions on each prawn (this will allow the marinade to get into the prawn).

Step 2

Once done, place the prawns, side by side, in a flat glass dish, pour the marinade over and refrigerate at least 2 hours (more will be better!)

Step 3

When ready, grilled or sautéed (3 to 4 minutes), peel and eat the prawn as it is or dip it in a side sauce made roughly of some lime, chili, olive oil and salt.
