You can keep tomatoes in the fridge contrary to the advice which stipulates to keep them out. However, for good flavour, remove them from the fridge at least half an hour before using.
Did you know that Frozen vegetables are more nutritious than the fresh ones as they have been frozen immediately after picking. Also they are sometimes cheaper.
If you want to freeze food that has been just cooked, cool it as quickly as possible then place it in a closed container which will be labelled with the content and the date.
A less fattening and cheaper alternative to Parmesan is the Grana Padano; both cheeses are good for use in soups, risottos and most pasta dishes except the ones containing seafood!
Use the carcass of roast chicken and leftover vegetables to make a real good stock or soup.
To reduce the saltiness in cheeses, soak them in water but to reduce saltiness in anchovies, soak them in milk.
To obtain nice crispy fried onions, dust the onion slices with flour before frying.
For a crispy pastry base, put the container in the oven on top of a preheated tray.
Take the meat or chicken out of the fridge at least 30 minutes before cooking. 15 minutes only for fish.
Always marinate meat or chicken intended for grill or casserole few hours before cooking or preferably overnight.
To fry an aubergine cut it into slices which will be salted and left in a colander for at least half an hour before being rinsed and pat dried. This will stop the aubergine to soak up excess oil.
