How to Refrigerate and Freeze Herbs and Greens & Other Vegetables
HERBS AND GREENS IN THE FRIDGE
To keep herbs and greens fresh and longer in your fridge, before washing them, wrap them in newspapers (sprinkled with a little bit of water) then place them in a plastic bag. They will keep fresh for at least a week (provided they were initially bought fresh and not wilted).
If you buy them sealed in bags, make sure that the bag has holes, before refrigerating. If not, pierce the bag few times with a small sharp knife. This will insure less humidity inside the bag, thus avoiding any slime.
If the herbs and other greens have already been washed, to refrigerate wrap them in kitchen towels then place them in plastic bags.
HERBS AND GREENS IN THE FREEZER
To freeze herbs, just wash and and pat them dry before placing them, either whole or chopped, in freezer bags.
To freeze greens or other vegetables, wash then blanch them in boiling water for 2 minutes. Drain, cool ASAP then place them in freezer bags or containers. I, personally, prefer freezer bags because they take less space in the freezer. Make sure you remove as much air as possible from the bag by pressing down, before you seal it.
N.B.: if you need to freeze potatoes, you must first parboil them or, in the case of fries, parfry them.
