Spiralized Courgette or zucchini noodles

We all know that vegetables and fruits are good for us. They help us to stay healthy!

Here is a recipe that is easy to do if you have a spiralizer, a sharp cutting device invented by the Japanese. It makes thin ribbons of the vegetable you are using.

If you don’t have this device, you can still prepare this dish by hand cutting the courgette or zucchini into fine sticks.

Ingredients

  • 2 courgettes or zucchinis, spiralized
  • 3 cloves of garlic, mashed
  • 2 or 3 tbsp of olive oil
  • 1/4 tsp of turmeric
  • 1/2 tsp of dried mint
  • 1 tsp of toasted sesame seeds
  • 1 squeeze of lemon
  • Salt and pepper, to taste

Method

Step 1

Wash, dry then spiralize or hand cut the courgettes. When spiralized, you will obtain, courgette noodles. If hand cut, you will have courgette sticks.

Step 2

On a medium heat, using a wok, toss the noodles with the olive oil, the mashed garlic and the dried mint. Season with salt and pepper then cook further for about 2 or 3 minutes. They must be al dente, with a slight crunch. They will loose their appeal if they become mushy!

Step 3

Out of the heat, add a squeeze of lemon, mix well then sprinkle the sesame seeds on top. Serve warm or at room temperature.
