Spinach Soup

This is a recipe of mine. It is a healthy and hearty winter soup! Also Easy and quick to cook!
I use fresh spinach leaves but you can do it also with frozen spinach.

Ingredients

  • 200g of spinach
  • 1 cup of red lentils
  • 1 or 2 potatoes
  • 1 onion
  • 1 celery stick and 1 leek
  • A big chunk of butternut squash
  • 2 tbsp of olive oil
  • 1 cube of organic chicken or vegetable stock
  • Lemon juice
  • 1 tbsp of coriander powder
  • 1 tsp of turmeric powder
  • 1 tbsp of garlic powder or 3 fresh cloves
  • Salt & pepper

Method

Step 1

Wash, peel and finely slice all the vegetables, including the onion and the garlic.

Step 2

Heat the oil in the soup pot and add the onion and the garlic first then add all the other ingredients and the spices. Stir fry for few minutes then add the water and the stock cube or replace with a liquid stock of your choice.

Step 3

Let the soup boil for about 45 minutes over a medium heat then add the lemon juice and season with salt. Make sure that the lentils and the potatoes are well cooked.
