    Just before cooking, drizzle lemon juice over both sides of the skate wings. After a few minutes, pat the wings dry, then season with salt and white pepper to taste.

    Heat a large frying pan over medium-high heat. Add the butter and allow it to brown slightly before adding the fish. Fry the wings for about 4 minutes on each side. Test for doneness by inserting a toothpick. At this point, you can serve the fish plain, without herbs. Otherwise, in the last minute, add the herbs and balsamic vinegar, then cover with a lid.

    Transfer the wings to a platter and spoon the butter and herb sauce over them. Serve warm.
