Roasted Carrots with Dates

I cooked these carrots for our family on Christmas Eve! Not a shred of carrot was left! Everyone liked it a lot.

The idea of roasting them with dates came to me because I had received packets of them from our friends, from UAE and Qatar. I needed to use them as we could not really eat them all.

Try this recipe. Adults and children wilt love it!

NB: you can replace the dates with raisins and add a sprinkle of sesame seeds!

Ingredients

  • 500g of carrots, washed, peeled and sliced lengthwise into 4 pieces (or more if needed)
  • About 10 ripe dates, pitted and cut into small pieces
  • 1 tbsp of garlic powder
  • 1 tsp of thyme
  • 1/2 tsp of coarse black pepper
  • 2 or 3 tbsp of olive oil
  • A squeeze of honey (if the dates are on the dry side)
  • A sprinkle of salt
  • A drizzle of water

Method

Step 1

Heat the oven to 180 degrees. Place the sliced carrots in a roasting dish then stir in the dates and the rest of the ingredients. Mix well with the carrots and place in the oven. After 30 minutes, increase the heat in the oven to 200 degrees to caramelise the carrots. Remove when ready and serve as a side dish.
