Rice with Green Broad Beans (also known as Fava Beans)

This recipe is from Lebanon. It can be prepared also with minced meat but I prefer the vegetarian version which I cook during our meat free days.

It is delicious with a side serving of yogurt and/or green salad.

You can use any type of rice but the white short grain one would be best.

I also like to use the frozen broad beans seeds instead of having to remove the seeds from fresh pods.

Ingredients

  • 1 cup of white rice, soaked and washed
  • 350g or more of frozen green broad beans
  • 1 large onion, diced
  • 3 cloves of garlic, crushed
  • 1 tsp of cumin
  • 1 tsp of turmeric
  • 1 tsp of white pepper
  • 4 tbsp of olive oil, or as needed
  • 1 organic veggie or chicken stock cube
  • Salt, to taste
  • Yogurt (optional), as a side serving

Method

Step 1

In a pan, start by frying the onion until golden. Then add the garlic and the beans followed by the rice and the spices. Stir fry for few minutes until the rice is translucent.

Step 2

Add 2 cups of water and the stock cube and let it simmer on a low heat until the rice is cooked. Adjust the seasoning before all the water is absorbed.

Step 3

Serve with yogurt and or a green salad, if you like.
