    Prepare the marinade by mixing together all the seasoning ingredients. With the sharp end of a knife, prick and make small incisions on each prawn (this will allow the marinade to penetrate the prawn).

    Once done, place the prawns side by side in a flat glass dish, pour the marinade over them, and refrigerate for at least 2 hours (longer is better!).

    When ready, grill or sauté (3 to 4 minutes per side), then peel and eat the prawns as they are or dip them in a side sauce made with lime, chili, olive oil, and salt.
