Orange salad

Summer is on it’s way and fruit salads are perfect for dessert! They are lighter in calories than puddings and, most of all, loaded with nutrients and refreshing…
And oranges are still in season!

For decoration, I use a red berry preserve that has whole fruits in it (blackberry, cherry, strawberry…) or do a quick compote by mixing a frozen berry with sugar and cooking it.

Ingredients

  • 5 or 6 oranges, preferably organic
  • Any red berry preserve or red berry compote
  • 1 handful of almond slivers

Method

Step 1

Wash the oranges then pat them dry. On a board and with a sharp knife cut first the top and the bottom of the orange then continue cutting sideways until all the peel and white skin are cut out.

Step 2

When all the oranges are peeled, cut them in round slices (not too thin!) and arrange them in circle on a serving platter. Top each orange slice with a berry (preserve or compote), drizzle with some berry sauce then scatter some almond slivers all over. Refrigerate then serve cold.
