Lentils Salad and Sautéed Prawns

Lentils and prawns are two ingredients that are good sources of protein and other beneficial nutrients.

Lentils are known to be part of the world’s healthiest foods. They are low in calories and high in vitamins, minerals and fibre.

Prawns are also low in calories (low fat) and contain numerous minerals and vitamins.

This salad would be ideal for lunch or a light dinner.

Ingredients

  • 1 cup of brown or green lentils
  • 1 coloured bell pepper + 1 stick of celery diced (small)
  • 1 large French shallot, finely chopped
  • 2 tomatoes, diced (small)
  • 2 garlic cloves, mashed
  • Juice of 1 lemon, or to taste
  • 1 handful of fresh parsley, finely chopped
  • 2 or 3 tbsp of olive oil
  • Salt and pepper, to taste
  • The above ingredients are for the lentils salad.
  • 1 dozen raw, peeled and deveined large or medium size prawns
  • 1 tsp of hot smoked paprika
  • 1 tsp of garlic powder
  • 1/4 tsp of turmeric
  • 1/4 tsp of white pepper
  • A squeeze of lemon
  • 2 tbsp of olive oil
  • Salt, to taste

Method

Step 1

Wash the lentils then cook them in water (no salt!) until tender but not mushy. Drain and put aside to cool down.

Step 2

In a salad bowl, combine the other ingredients then add the lentils and mix well. Adjust the seasoning if needed. The salad is ready

Step 3

In another bowl toss the prawns with garlic powder, hot smoked paprika, white pepper, salt and a squeeze of lemon.

Step 4

Heat the olive oil in a pan over a high heat and cook the prawns for 2 or 3 minutes until pink. Remove from the pan to cool down.

Step 5

Finally, put the prawns on top of the lentils salad and serve.
