Grilled Courgettes or Zucchini with Gremolata-like sauce2022-11-30

For this recipe, I used white courgettes (see photo) but you can use also the green or the yellow ones.
It’s a perfect side dish!
- 3 or 4 courgettes, sliced into strips
- One handful of chopped parsley and mint in equal amounts
- Lemon zest and lemon juice, to taste
- 2 garlic cloves, mashed
- 3 tbsp of olive oil
- Salt and pepper to taste
Remove both ends of the courgette then cut each courgette lengthwise into 2 or 3 strips. Brush the strips with a little bit of olive oil then grill them on both sides, on a hot plate or under a grill. When ready, place them in a dish and spoon the gremolata -like sauce over and serve.
For the gremolata-like sauce, chop a handful of parsley and mint. Put in a bowl then mix the herbs with 2 tbsp of olive oil, 2 mashed garlic cloves, lemon juice, lemon zest, pepper & salt; the last 4 ingredients, to taste.
