Fried cabbage with pancetta (streaky bacon)2021-01-05

This is a very easy, simple and delicious way of cooking cabbage. You need only 5 ingredients and it takes only few minutes to cook it. It’s the perfect accompaniment to any main dish.
You can replace pancetta or any other streaky bacon by lardons.
- Leaves of half of a medium Green or white cabbage , washed and roughly chopped
- 2 tbsp of olive oil
- 4 or 5 slices of pancetta or streaky bacon, cut into bite size pieces
- 1 heaped tsp of garlic powder + 1/2 tsp of turmeric
- Salt ( if needed) and white pepper to taste
Put a frying pan on high heat then add the olive oil and fry the bacon pieces. When golden brown add the chopped cabbage together with the garlic powder, the turmeric and the white pepper. Mix well to combine with the bacon and keep frying until the cabbage has wilted and coloured a little bit but has still retained its crunch. Taste before adding any salt ( bacons are usually quite salty).
