French Flat Green Beans Sautéed with Garlic and Parsley

These French flat greens beans are also known as Romano beans. They are stringless and more flavourful than other varieties. But before sautéing you need to lightly cook them in salty water, according to your taste (crunchy or tender). However, don’t overcook them as they will cook further when they are sautéed.

They are perfect to accompany any meat or fish dish!

NB: these beans are long so you need to cut them into smaller pieces. I also, sometimes, slice them vertically as shown in the above photo.

You can also use other varieties of green beans such as the Rounded or the Runner beans.

Ingredients

  • 200 g of flat green beans, washed, trimmed and sliced
  • 2 large garlic cloves finely cut into small pieces (not minced)
  • A large handful of fresh parsley, finely chopped
  • 2 or 3 tbsp of olive oil
  • Salt and black pepper to taste

Method

Step 1

Start by cooking the beans in salty water to your liking (crunchy or tender), then drain.

Step 2

Put a large skillet on a medium high heat then add the olive oil followed by the garlic. Once the garlic is fragrant stir in the beans with the salt and the black pepper. Cook and toss them for about 2 or 3 minutes then mix in the parsley. Sauté for few seconds then remove from the heat.
