    In a food processor, first mince the onions and mint leaves, then add the lamb meat (or beef or turkey), the seasonings (except the bicarbonate of soda), and 2-3 ice cubes. Process until a paste-like consistency is achieved.

    Remove from the food processor, add the bulgur (squeezing out all the water) and bicarbonate of soda to the meat mixture, and knead like dough until the bulgur and meat are well blended.

    Oil an oven dish and spread the kibbeh mixture evenly. Make a hole in the center with your finger, lightly score a diamond pattern on the surface (see photo), drizzle with olive oil, and bake until golden brown.

    Serve with a yogurt, cucumber, mint, and garlic mixture, or a green salad.
