    Heat the olive oil in a large frying pan with an ovenproof handle. When hot, add the onions and fry until slightly caramelized. Then add the bell peppers and potatoes. Continue stir-frying until the potatoes are lightly colored.

    Meanwhile, beat the eggs in a bowl, season with salt, white pepper, and turmeric, then pour over the vegetables. Mix well and cook over low heat until the bottom and at least half of the eggs have set. Remove from the heat and finish cooking the top under the grill.
