Heat the olive oil in a large frying pan over medium-high heat, then toss in the Gem lettuce leaves with only a small sprinkle of salt. Sauté until the leaves have slightly wilted and released some of their water. Remove the water with the help of a lid, then add all the other ingredients, including more salt if needed. Sauté for 1 or 2 more minutes but don’t overcook! It’s much nicer when the leaves retain a little bit of crunchiness.
