    Preheat the oven to 180°C. For this tart, use an approximately 30 x 20 cm pan, which is the perfect size for one sheet of ready-made rolled puff pastry. Line the pan with the pastry, prick the base all over with a fork, then cover with a piece of baking paper topped with beans or other weights. Blind bake for about 20 minutes. Remove from the oven when done.

    In a bowl, mix the grated cheeses with the cream-egg mixture and the chopped herbs. Season with salt and white pepper to taste, then spread the mixture evenly over the pre-baked pastry base. Bake for 30-35 minutes or until the top is mottled and golden.
