    This dish cooks quickly to keep the vegetables al dente and the prawns juicy. Heat the olive oil in a wok or large pan over medium-high heat. Add the chopped garlic and chili, stir-fry for a few seconds, then add the julienned bell pepper. Stir until the pepper is al dente.

    Add the cherry tomatoes and stir-fry until wilted. Stir in the lemon zest and a squeeze of juice, then season with salt and freshly ground black pepper. Add the prawns and parsley, stir-fry for 2 minutes. Add the julienned courgette 1 minute before removing from the heat.

    Scatter with spring onions. Toss with spaghetti or serve alongside rice or quinoa.
