    After boiling and draining the potatoes, mash them with double cream, grated Parmesan, salt, and white pepper, then set aside.

    Heat a large frying pan over medium-high heat and add enough olive oil to sauté first the onion and garlic, then the diced chicken. When the chicken is no longer pink, add the vegetables and spices. Stir-fry for 5 minutes, then add a glug of white wine. Cook for another 5 minutes, then stir in the tinned tomatoes. Lower the heat and simmer until everything is cooked and the sauce liquid has evaporated. Stir in the basil, taste, and adjust seasonings if needed.

    For assembly, use an oven-safe dish large enough for 2 layers of mashed potatoes and 1 layer of chicken and vegetable mixture, as shown in the photo. Butter or oil the dish, spread the first layer of potato, top with the chicken mixture, then add the second layer of potato (spread evenly). Bake in a 180°C oven until golden brown and serve with greens or a salad.
