In a bowl, combine the minced pork with all other ingredients except the breadcrumbs. Mix and knead until well combined, then form into patties (I made 2 large and 2 medium for 4 total). Dip each patty in breadcrumbs on both sides, then refrigerate for a few minutes.

While the patties chill, drain the soaked porcini mushrooms and cut into smaller pieces. Slice the onion into wings and finely chop the garlic; set aside.

Heat a frying pan over medium-high heat and add 2-3 tbsp olive oil. Fry the patties until cooked through and nicely browned. Remove and keep warm. In the same pan, add the onions, garlic, mushrooms, and seasonings. Stir-fry until onions are fragrant and lightly colored. Add a few drops of wine or stock 1-2 minutes before the end. Return patties to the sauce and serve.
