    Put a frying pan on medium heat and fry the okra in olive oil until cooked and slightly colored. Remove from the pan, sprinkle with lemon juice, and set aside.

    In the same pan, fry the onion until translucent, then add the garlic and coriander and stir-fry until fragrant. Add the tomatoes and the tomato paste diluted in 3 tbsp water. Season with salt and pepper and continue cooking until the tomatoes have broken down and formed a nice, thick sauce. Add the fried okra and cook for another 5 minutes. Taste and adjust the seasoning if needed.
