    Mix the minced meat with the finely chopped onion, parsley, and spices. Form the patties, place them in an ovenproof dish (large enough to later accommodate the vegetables), drizzle with olive oil, and bake until golden brown. Set aside.

    While the patties are baking, cut the pepper and courgettes lengthwise into 8 pieces, then cut the potatoes and tomatoes into round slices.

    In a bowl, mix the tinned chopped tomatoes with the diluted tomato paste, garlic, thyme, turmeric, salt, pepper, and a squeeze of lemon.

    To assemble, first place the peppers and courgettes between the patties, cover everything with the potato slices, place the tomato slices on top, then pour the tomato mixture all over. Drizzle with olive oil, cover with aluminium foil, and bake in a 180C oven until the potatoes are cooked (around 35 minutes). Remove the foil and bake for a further 5 minutes before removing from the oven.
