    Remove about three-quarters of the cooked, still-warm chickpeas from their water and put them in a dish. Mash these chickpeas with a fork, but don’t overdo it as you need to keep them partly chunky.

    Now make a sauce by mixing these chickpeas with a few tbsp of the reserved cooking water, the tahini, lemon juice, mashed garlic, cumin, and salt. Taste and adjust before topping with the remaining whole chickpeas, toasted pine nuts, toasted bread, and parsley (or any other toppings of your choice). Drizzle with olive oil and serve while still warm.
