Put the pork belly pieces in a pan of water. Bring to a boil, then reduce the heat and simmer. Remove from the water after 30 minutes.

Meanwhile, mix all the other ingredients except the sesame seeds well. At this stage, you can taste the sauce and adjust it to your liking.

Put the pork into a baking dish, pour the prepared sauce over it, and bake in the oven for about 1 to 1½ hours. Turn the pieces from time to time.

When cooked, put the dish under the grill for a few minutes to obtain a nice caramelised color. When ready, sprinkle with toasted sesame seeds and serve.
