Sun-Dried Fig Jam (Lebanese Style)

    Cut the dried figs into smaller pieces, then soak them in water for a few hours. Once the figs are hydrated and soft, drain them and place in a pot.

    Place the pot over medium-high heat. Add the remaining ingredients and mix well to combine. Continue stirring until the sugar has dissolved. Reduce the heat, then taste to check if it is sweet and aromatic enough. Adjust ingredients as needed. Continue cooking and stirring until the figs are cooked and have developed a nice golden colour.

    Transfer the jam to a sterilised jar. After sealing the jar, invert it and place on a rack to cool. Store in the refrigerator after opening.
