Place the chicken pieces in a large glass container. Add the carrots, celery, onion, garlic, bouquet garni, cloves, black pepper, cinnamon stick, and chili flakes. Pour in enough red wine to submerge the chicken. Cover with plastic wrap and refrigerate overnight or at least a few hours.

Drain the chicken pieces, reserving the marinade. Strain the solids from the marinade and set aside. In a large Dutch oven or casserole, heat the olive oil and butter. Brown the chicken pieces on all sides, then remove and set aside.
