    Sauté the chicken thighs in olive oil in a large pan over medium-high heat until lightly browned. Remove from the pan and set aside. In the same pan, sauté the onion, garlic, celery, carrots, bell pepper, and mushrooms for 8-10 minutes, stirring occasionally.

    Pour in the wine to deglaze the pan and cook until it has almost evaporated. Add the tomato mixture with the chicken stock cube and ¾ of the reserved porcini soaking water (avoid any sandy sediment at the bottom).
