Cut the fish fillets into small cubes and put them in a glass or ceramic bowl.

Cover the cubed fish with lime or lemon juice, then refrigerate overnight or for at least a few hours. Turn occasionally. The fish is “cooked” when the cubes become opaque. Discard any excess lime juice.

Slice the onion into thin wings and the tomatoes into small cubes, then add to the fish cubes with the pickled serrano peppers and/or red chilli, oregano, snipped coriander or parsley, and season with pepper and salt.
